Fill a cocktail shaker with ice cubes and add 2 ounces of pisco, 3/4 ounce of freshly squeezed lime juice, 3/4 ounce of simple syrup, 1 egg white, and a few dashes of Angostura bitters.
Shake vigorously for about 30 seconds until the drink is well-chilled and frothy.
Strain the drink into an old-fashioned glass over fresh ice cubes or strain into a coupe glass (depending on your preference).
Garnish with three drops of angostura bitters to form a crosshatch pattern on top and enjoy!
