Add the cloves, cinnamon sticks and cardamom pods; reduce the heat to low-medium and let simmer for about 15 minutes.
Meanwhile, peel off strips of orange zest with a vegetable peeler or small knife and set aside (if using).
After 15 minutes have passed, add the orange zest if desired then let everything simmer together on low-medium heat for another 10-15 minutes more until fragrant and flavorful (make sure not to let it come to a boil).
Strain through a mesh sieve into mugs or cups and serve warm with your favorite festive garnishes like cinnamon stick stirrers or extra fruits!
