Its exact origin remains unknown, but it’s believed to have been created by George Williamson of Washington D.C.’s Shoemaker’s Café as an alternative to the original whiskey rickey. Initially made with gin, lime juice, and soda water or seltzer water, over time other variations began to appear including one with lime syrup instead of lime juice and sugar added for sweetness.

Lime Rickey

make it non-alcoholic by omitting the gin or vodka

Ingredients

  • 1 1/2 ounces gin or vodka omit for virgin cocktail
  • 2 ounces lime juice freshly squeezed
  • 1 tablespoon superfine sugar or to taste
  • 4 ounces club soda or seltzer water
  • Lime wheels and/or mint leaves for garnish optional

Instructions

  • Fill a tall glass with ice cubes.
  • In a separate cup, combine the lime juice and sugar until the sugar dissolves completely.
  • Pour the lime juice mixture into the glass of ice cubes and stir gently to mix well.
  • Top off with club soda or seltzer water, stirring gently once more after adding it in order to distribute evenly throughout the drink.
  • Garnish with fresh lime wheels and/or mint leaves if desired before serving immediately chilled!

Glassware

The typical glassware used for the Lime Rickey is a highball or Collins glass. The tall, narrow shape of these glasses allows for easy sipping and also prevents the drink from becoming overly diluted with ice cubes. If you’re looking for something more festive and decorative, some people like to serve this cocktail in an ornate hurricane glass. This can be especially attractive when made with colorful garnishes such as fresh mint leaves and lime wedges.
